-->Way back in the mid-1700s, when farmers around Pittsburgh had more than 5,000 copper stills producing whiskey from their abundant corn crops, they often toasted one another to "good food, healthy families and great whiskey."
That toast now is the motto of Braddock's American Brasserie, inside the Renaissance Hotel, Downtown, as a tribute to the Whiskey Rebellion of 1791 on Braddock's Hill. Restaurant manager Eric Brown says that the concept comes from wanting to pay homage to the culture of Pittsburgh.
"We have such a unique heritage with different cultures, like Eastern European and Italian," says Brown, a native New Yorker. "We have a value-driven, diverse menu with dishes that celebrate Pittsburgh's history, like braised short-rib pierogies and lobster potato gnocchi. We also have the largest bourbon collection in the city, and three East End beers on tap.
"It's a celebration of Pittsburgh."
Braddock's American Brasserie is a stylish, 100-seat eatery featuring casual American and French cuisine in a sleek and sexy atmosphere. Diners won't find colorful artwork or loud music to distract them from the dining experience. Instead, subdued lighting casts warm glows on the polished ceramic-tile floor and dark wood tables and chairs. The dining room sits right behind the bustling hotel lobby, making it an ideal spot to surreptitiously watch guests coming and going.
Executive chef Dean Gress says that Braddock's prides itself on fresh, high-quality food, great service, and unique cocktails and drinks. It opened in September 2009.
"Opus was here before us," says Gress, 46, a Minnesota native who was a cook in the Marine Corps before graduating from Johnson & Wales University in Providence, R.I. "We turned it around. We get a lot of travelers, theater patrons and locals. This is not a regular hotel restaurant.
